Something’s Fishy…..

Last night, I made dinner for the architect. Actually, I do that most nights. I (almost always) love cooking. It’s that pesky cleaning up later that I hate.

BUT – back to the subject at hand. I do like to cook. And although I don’t LIKE getting groceries, I prefer that I do it (and not just because that way it does actually get done in a timely fashion – my timeliness, of course). I plan the week’s menu and buy the groceries that I’ll need. I usually make at least 4 servings for dinner, so that I can have the leftovers for lunch the next day.  The downside to this method, if you’re the architect anyway, is that the meals are 100% things that I like, but that rarely take into consideration his preferences.  Example: I rarely make fish and often use squash. 

That’s not to say that I don’t consider him when planning menus. I don’t cook with cauliflower. Or beets. And I even planted radishes last year for him (I really don’t like radishes). 

So – every once in a while I grit my teeth, plug my nose, and cook some fish. I usually pick a pretty mild whitefish (such as tilapia, or sole, or whatever is on sale). I’ve only cooked salmon twice (it’s so…fishy). But once a month, whether we need it or not, we have fish.

Last night I apparently hit the jackpot. The fish was excellent, and the architect endorsed it thusly, “I think I’m going to go out on a limb and declare this the best meal you’ve ever cooked for us. Ever.”

I even liked it – and I’m notoriously hard to please when it comes to fish. Also? It was easy.

So – my delicious fish recipe (as in the recipe I used – I did not create this recipe).

Sole with lemon caper sauce

  • 1 TB olive oil
  • 1 lb of sole (or other white fish)
  • Salt & Pepper to taste
  • 1 TB butter
  • 2 cloves garlic, minced
  • 3/4 c vegetable broth
  • 2 TB capers, drained, rinsed & minced
  • 4 TB lemon juice + zest from 1 lemon
  • 2 TB fresh parsley, chopped
  • Fresh grated parmesan cheese
  1. Heat the olive oil in a med. saute pan. Salt & pepper the fish, and cook 3 minutes on each side, or until fish flakes easily. (Be careful to not cook it too hot or it might fall apart a little. Not that I’d know.)
  2. Remove the fish from the pan & keep in foil until you’re ready to use. 
  3. Melt butter in same pan and add garlic. Saute until brown (about 1 minute). Scrape the sides to get all the crusty fish pieces up. 
  4. Add the broth & bring to a boil. Cook until the liquid reduces by half (about 5 minute). 
  5. Add the capers, lemon juice & lemon zest. Cook for about 2-3 more minutes, until the sauce begins to thicken. 
  6. Stir in parsley. Pour over fish. Sprinkle with grated parmesan. Serve.
From start to finish, including prep, it took about 20 minutes.  I served it with some roasted potatoes that I cooked in a little lemon juice & sprinkled with more parmesan.
When I ran it through my recipe calculator (without the potato side), It said that if the above recipe was 2 servings, each serving had 303 calories and about 15 grams of fat. It didn’t taste that fatty to me, but I’m sure that the 2 TB of fat account for that.  Other exciting nutritional information: 
  • 74 mg potassium
  • 34 g protein
  • 21% Vit A
  • 23% Vit C
  • 6% Vit E
  • 9% Calcium
  • 11% Iron
So – delicious, and (relatively) nutritious.  Although I was plenty full from my fish & potato (and martini), the architect was still hungry. Fortunately, he didn’t starve to death, but instead ate the extra elk burger that was in the fridge. 
Does anyone else have any ridiculously easy yet tasty fish recipes for me to try?  I’d like to get to fish 2x a month, and eventually once a week (and chicken once a week), so that we’re getting our 2 meaty meals each week from different sources. (I love chicken, but I think I may be running out of ways to cook it.)

Knee-hab Update

I had another session of PT today – I’m down to 1x/week.  Today my PT said, “I have a theory that you don’t actually have pes anserine bursitis. Does this hurt?” And she poked a tendon in my lower leg.  And then I fell off the table.

So – I just have the weirdest, most severe shin splints ever.  And the tightest IT Band ever. With the tension in my lower, inside leg fighting with the tension in my upper, outside leg, it’s no wonder my knees are fucked.

So – stretching, stretching, stretching.

I need to find one of those foam roller thingies.

I need to start with the ice baths after every run.

And I need to massage my shins until they’re bruised almost every day.

BUT – the good news is that with aggressive treatment, this is easily fixed. I have to be aggressive, though. Tomorrow after work – I am at the gym. Treadmill 3 min run/1 min walk (woo!) for 30 minutes. Foam roller. Leg press. Abductor/adductor machine. Extension/leg curl machine.

Wednesday – 30 minute (3 run/1 walk) run at home after work).

Thursday – crazy weights; 30 minutes elliptical.  That night I will reward myself with drinkies with the pdx bloggers – I’m going to be seeing HTC, Ambitious A, Junk Miles, and our guest celebrity, in town for the marathon.

Friday, I’m going to walk from my work to the architect’s work. I don’t think it’s too far.

Saturday – gardening and a run (another 3/1).

Sunday – anyone up for yoga?

Now, I just need to watch the food. I got a new swimsuit for Vegas last week, and it looks good, but with a few pounds less around the middle, it could look better!

Last night was weird. Bad weird, in fact.

I got home, had a martini (the architect had thoughtfully chilled my glass for me, so everything was all ready for the shaking).  We had a drink and then decided that since we weren’t going on a Friday night date, we would go down the street for tots. And beer.

As we exited, Darwin escaped (for the 2nd time that night, I might add – you’d think he had a hard life here or something).  We started to chase him down -but were interrupted.

A man about a block away started screaming, “Fuck! Fuck! Fuck! Fuck!” (and so on) and started running down the street.

Another man came running towards us. Apparently foul-mouthed man had attempted to stab other man and rob him.  The alleged victim asked us to call 911. So, I did. And honestly, it worked very well.  The only other time I’ve ever had to call 911, I got put on hold. I did not last night – and a cop showed up within 10 minutes.

He took a statement from the victim (who had been collecting money for his homeless church mission thingie). The man was a Vietnam vet who’d been hit on the back of the head during the war. He has a terrible stutter (and a vet degree from Texas A&M) and hand tremors.

As we were speaking w/ the officer, he got a call. Some other cops had picked up a possible suspect. The officer took our victim to the station to have him identify the attacker.  The architect & I told the man that we would wait for his church mission’s van to let them know where he was.

So we caught Darwin, threw him inside, and waited for the van (about a block away).  And then, then we heard our home alarm go off. Which was funny – because neither of us remembered arming it. So, when the officer came back to drop off our victim (who had identified the attacker, who was apparently mentally ill), he was also responding to our home alarm.

We’ve had a few break-ins in our neighborhood lately – mostly in the empty houses.  We’re still not sure what happened – the alarm company said it was our motion detector that went off – and since we were not in the house, we’ve decided to believe it was either a) a ghost or b) the kitties who combined in a whirling dervish on the kitchen counter (as one or even two cats cannot set off the motion detector).

We did not end up going out for dinner. The architect made couscous. I made rum & coke. We watched things get destroyed on the Discovery Channel. (tornadoes! bridge failures! helicopter crashes!)

I had nightmares all night and now that I’m home alone, every noise freaks me out.  I don’t want to go outside (and not just ’cause it’s cold).  It was such a weird night, what with attempted murders and possible attempted break-ins. Or ghosts. Or tasmanian kitties.

So – tonight, since McCain & Obama will not be standing me up, the architect & I will be having Thai food & hopefully not having to call 911.  *fingers crossed*

I went to crazy weights today – to fulfill my half of the exercise pact I made with Ms. Maximum Heartrate yesterday. (did you do your run?) It was pretty good – although my gym buddies are all traveling fools right now, and so it was just me (and about 20 other people).

I feel awesome, and although I think I’ll be sore, I don’t think it will be as bad as last time. I’ve had a pretty good week. I ran Monday & Wednesday (2/2 intervals, which I’ll repeat tomorrow – and then hopefully I’ll be able to do 5/1 intervals or something next week). I didn’t really do anything on Tuesday except for set my alarm for 5 AM and then turn it off in my sleep. This morning I got my weights in AND about 20 minutes on the elliptical. Tomorrow I am going to run. I’m trying to decide if I should do yoga tomorrow or on Saturday. I’m leaning towards Saturday…but I want to make sure that I actually get there. 

Today has been pretty busy at work – I’m looking forward to my 4-day weekend! Tomorrow, besides the run (and possibly the yoga), I am planning on catching up on my book reviews and maybe hitting the library. The architect and I are dating at home tomorrow night so I can watch the debate.  He’s thrilled to be having a romantic evening with me, McCain & Obama. They’d better not stand us up. The architect will be crushed!
