Happy Hallowe’en!

And Happy Samhain, too – if you celebrate such things.

And, most importantly, Happy Anniversary to me! (And the architect, obvs.)  We’ve been married five years today.

We had a GREAT Spooktacular this weekend, but alas! I have no photos to share. I didn’t take ANY of people (people who were there, please send me pics) and totally forgot to download the decorations and food pics that I did take.

I drank my weight in delightful green punch, that I kind of want to drink every day (even though that amount of sugar totally makes Alvie a hyper monkey) and believe everyone had a good time.

The architect & I celebrated our anniversary yesterday by lazing about. We exchanged gifts in early afternoon.  (And I didn’t take pictures of these, either.)

I got him an X-box 360/kinect (found an awesome deal on a refurbished one) as well as Halo 3 (he loves those Halo games) and he got me a CHAINSAW! I have my very own chainsaw! And then, it rained all afternoon so I could not go out and terrorize the neighborhood evil hedge. SAD!

You guys – I am seriously so stoked about my chainsaw. I have been wanting one for ages! I can’t believe  I am a chainsaw owner now! (Especially since I’ve had stitches twice from accidents involving 1) a small paring knife and 2) and electric meat slicer.) BUT a new accident-free, tree cutting down era is about to begin!

(Also, the Xbox is cool, too.)

ANYWAYS – Happy 5th anniversary, Mr. Architect and giver of the most awesome gift ever.

 

Ummm – apparently I don’t have any photos of year 1 OR the architect & I together at last year’s spooktacular! WTF, Amy?!?

 

ANYWAYS – I will soon post a link to my hallowe’en party photos, and then if you want, you can totally enjoy. Or not. Whatever.

 

Other big news today – I have my next ultrasound scheduled, so next week (Tuesday!), we will find out the sex of baby Alvie Bean! Bets? My money’s on boy, but either way, it will be awesome.

Watch out for zombies, witches, and sugar comas tonight!

Hard to believe….

Yesterday marked nine years since I met the architect. Nine. From the day we met, I knew he was something special. The end of the month will mark five years of marriage.

I can still remember, towards the end(ish) of our first date, walking out on the Venice (CA) pier in the fog and knowing that this was going to be an interesting trip.

At that time, a year seemed like forever, and nine years unthinkable (I had a very strict 2-month expiration date on all relationships at that time), but something about him kept me breaking all my rules.

We’ve had ups & downs, like any couple, but in that nine years, it’s always been him.

The next nine years are going to be epic.

The Anniversary Feast

I just found this in my drafts folder – dated Nov 2009. Completely written. All photos inserted. A couple recipes missing – which I’m guessing is why I never hit publish – but close enough. Let me know if you want the risotto recipe! :)

This year, I told the architect that I was going to make him a big fancy anniversary dinner. That way we wouldn’t have to go out & miss all the trick or treaters!

As I started the menu planning, I realized that I was in over my head. I am a pretty good cook. However, I am not a good menu planner. So, I enlisted the help of one of my favorite food bloggers, Maris! And she was AWESOME! Honestly, I couldn’t have done this without her. Go – visit her site! Make the recipes!

SO – with that being said, it is not her fault that my pictures turned out so poorly. We got back from our overnight to Astoria later than I’d planned, and by the time I’d gone to the grocery store & finished my homework, I was feeling rushed.

First – the menu.

Appetizers

Bacon-wrapped dates (stuffed with blue cheese)
Fig jam & goat cheese on crackers
Lemon drops (these were supposed to be pomegranate cocktails, but I forgot to buy POM at the market, and had to make do with what I had)

Salad course

Arugula, endive & spinach salad with carmelized walnuts (I carmelized my own walnuts, go me!), pears & blue cheese, with a light vinaigrette
Finished the lemon drops

Main course

Vodka garlic risotto
Sun-dried tomato & goat cheese stuffed chicken breasts
Sauvignon Blanc

Dessert

Originally I was going to make this, but the architect had a special request, so I made:
Cream cheese marble brownies
Cabernet sauvignon

The recipes (+ photos & thoughts)

Bacon wrapped dates stuffed with cheese (this is so easy, I’m not even sure it’s a recipe)

  1. Remove pits from dates.
  2. Stuff cheese into hole where pit once was
  3. Wrap with bacon (it took about 1/2 slice of bacon per date)
  4. Skewer & place on baking dish with high sides (so the grease doesn’t spill out)
  5. Cook at 350* for 25 minutes, turning frequently (a lot more frequently than I did, by the way).
  6. Enjoy! (yum)

Fig jam + goat cheese + crackers

  1. Spread goat cheese on crackers.
  2. Top with jam.
  3. Eat.

Carmelized walnuts for salad (from Epicurious)

Ingredients

  • Nonstick vegetable oil spray
  • 1/2 cup sugar
  • 2 tablespoons balsamic vinegar
  • 1 1/2 cups walnuts

Directions

  1. Preheat oven to 325°F.
  2. Line heavy rimmed baking sheet with foil. Spray foil with nonstick spray.
  3. Combine sugar and vinegar in small saucepan. Stir over medium heat until sugar dissolves, about 3 minutes.
  4. Add nuts; toss to coat. Transfer mixture to baking sheet.
  5. Bake until nuts are deep brown and syrup thickens and coats nuts, stirring occasionally, about 10 minutes.
  6. Cool completely on baking sheet. Break nuts apart.

I have no picture of the salad, so you’ll have to just imagine these on a bed of greens, mixed with blue cheese and pears. These were FANTASTIC, by the way. YUM!

Vodka Garlic Risotto (from my risotto cookbook)

Sundried tomato & goat cheese stuffed chicken breasts (from myrecipes.com)

Ingredients

  • 1  cup  boiling water
  • 1/3  cup  sun-dried tomatoes, packed without oil
  • 2  teaspoons  olive oil, divided
  • 1/2  cup  chopped shallots, divided
  • 1 1/2  teaspoons  sugar
  • 3  garlic cloves, minced
  • 2 1/2  tablespoons  balsamic vinegar, divided
  • 1/2  cup  (2 ounces) crumbled goat cheese
  • 2  tablespoons  chopped fresh basil
  • 3/4  teaspoon  salt, divided
  • 4  (6-ounce) skinless, boneless chicken breast halves
  • 1/8  teaspoon  freshly ground black pepper
  • 3/4  cup  fat-free, less-sodium chicken broth
  • 1/4  teaspoon  dried thyme
  • 2  teaspoons  cornstarch
  • 2  teaspoons  water

Directions

  1. Combine boiling water and tomatoes in a bowl; cover and let stand 30 minutes or until soft. Drain and finely chop.
  2. Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add 1/3 cup shallots, sugar, and garlic; cook 4 minutes or until lightly browned, stirring frequently. Spoon into a bowl; stir in 1 1/2 teaspoons vinegar.
  3. Combine chopped tomatoes, shallot mixture, cheese, basil, and 1/4 teaspoon salt, stirring well.
  4. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket. Stuff about 2 tablespoons cheese mixture into each pocket. Sprinkle chicken evenly with 1/2 teaspoon salt and black pepper.
  5. Heat 1 teaspoon oil in pan over medium-high heat. Add chicken; cook 6 minutes on each side or until done. Remove chicken from pan; cover and keep warm. Add broth, remaining shallots, 2 tablespoons vinegar, and thyme; bring to a boil. Combine cornstarch and water, stirring with a whisk. Add cornstarch mixture to pan; bring to a boil. Cook 1 minute or until sauce is slightly thick, stirring constantly. Serve sauce over chicken.

I also have no dessert pics (boo!), but I do have a picture of the sweet pumpkin the architect carved!

Even though I was stressed out, and we were both tired, it was a fantastic meal. I’m not sure I’ll ever do that again, though! Too much work when we should’ve been enjoying each others’ company. It was nice to have the meal at home, but it was NOT nice to have to work so hard for it. Also, due to time spent in the kitchen, I missed most of the trick-or-treaters AND ended up failing my first quiz of my class (also my life). Next time, I will just hire a personal chef. Or get take out. :)

Winos…back at it…sadness…and some happies

Last night, I walked for about 30 minutes before heading over to my friend’s to drink my uber-expensive bottle of wine…..

We drank the bottle, chatted, and she gave me clothes. I think I owe her a lot more $9.99 bottles of wine. And this was actually pretty damn good! Much better than my usual $6.99 wine!

My ITB is feeling a lot better today. I think the stretching & rest has been good. I’m going to try really hard to remember to stretch & rest & use the foam roller after all vigorous workouts. Better to take a few  minutes to stretch & roll than have to take 2 days off, right?

Tonight after work, I’m headed to the gym for weights & a swim (and maybe a bit o’ bike if I get all inspired). Tomorrow – yoga. I’m running Friday & Saturday, which means I won’t run tomorrow morning (I just can’t do three days in a row), and I’m going to try to get another bike in on Sunday. Sunday is the North Portland Sunday Parkways, when they close some streets & you can just pedal freely without having to worry about cars. There’s entertainment & food vendors, and it looks fun. It’s a ways away from where I live, but not so far that I couldn’t bike there.

The sadness referred to in my post title is that my kick-ass neighbors, whom I haven’t talked about on this blog for a week and a half (maybe causing you to wonder if they’d suddenly become less kick-ass – perhaps they admitted to being closet Cheney fans, or tried to convert me to the Church of Jesus Christ of Latter Day Saints or something) are gone. GONE! They say they’re coming back, but who knows….. They actually left for Spain about a week and half ago, and are supposed to come back this Friday, I think. BUT HOW COULD THEY LEAVE ME FOR SO LONG??? (Hey kick-ass neighbors – I’m just kidding. I promise I haven’t become a creepy stalker neighbor.) It’s so weird – we’ve only been neighbors for about a month or so, but already it’s like we’ve known each other for much, much longer. In a good way, really! I’m just glad they’re going to be back in time to party with us this weekend.

And, since this is the most disjointed post in a long time, I just want to do some anniversary shout-outs!

6/15 – my maternal grandparents celebrated 66 years of marriage

6/16 – my parents celebrated 34 years of marriage

6/17 – my friend Dr. Marcy & her husband celebrate 3 years of marriage.

6/23 – workout buddy & runner The Ambitious one & Mr. Pi celebrate some marriage. Maybe 2 years. I didn’t get specific before I added it. oops.

Congrats everyone! It’s a good week for weddings, apparently. Although Marcy has a ways to go before she catches up with the others!

Happy Halloversary

Today is my 2nd wedding anniversary. Two years ago, the architect & I got hitched at Multnomah Falls – a bold move for the end of October in the Pacific Northwest. We were lucky (in oh, so many ways), and it didn’t start raining until about 10 PM that night.

In the last 2ish years, we’ve gone through a LOT of changes. We moved to Portland from Los Angeles. We got new jobs. We bought a house. I got another new job. We adopted a new baby (cat). We have done home improvement projects together without ever actually threatening to kill the other party. And we still kinda like each other.

I can’t imagine anyone else (with maybe the exception of Johnny Depp or something) that I would’ve rather done all those things with. We have our issues – I think most couples do – but every year (we’ve been together 6 years now) – we get better & better at resolving them.

Tonight, after handing out candy to the neighborhood ghosties, we’re going out for dinner. That’s about all we have planned for this year. But really – who needs more? I’ve already got the best husband AND the day off.

I love you Mr. Architect – and I’m definitely looking forward to spending many more Halloversaries together.
